One-Skillet Breakfast Meal

The best thing about this one-skillet breakfast meal is that it is an easy, healthy breakfast the whole family will enjoy (as pictured here).

This One-Skillet Breakfast Meal is gluten-free, dairy-free, nut-free and Paleo.  It may be free of all of the above but it isn’t free of flavor and fits in perfectly with many family’s dietary restrictions. But best of all it is an easy, healthy breakfast for those busy weekday mornings. 

It is filled with sauteed veggies and fried eggs, a great way to start the day, especially on a weekday. 

Yes, that’s all great but the best thing about this dish it is how fast this easy, healthy breakfast is to make.  

I don’t know about you but our weekday mornings are pretty hectic and no matter how early I get up (you can find out why I like to get up before my family in this article) it seems we are always rushing out the door.

Which is usually due to a last minute wardrobe change, a forgotten sweater, water bottle, gym clothes – the list of possible reasons is endless.

Side note: I actually saw a family who had a checksheet posted on their front door that listed the items that each child needed in their bag before they left the house. Brillant!  I’ll have to get on that because I think it is a great idea.

Back to this easy healthy breakfast…

We’ve all heard that ‘breakfast is the most important meal of the day.’  Some people disagree and if you are interested in exploring that more check out this article.

But what doesn’t usually get mentioned is what that ‘most important meal’ should look like.

For us, in our household, the point of breakfast is to fuel the body for the day which means a meal that contains protein, fat, vegetables.

One-Skillet Breakfast Meal: An Easy, Healthy Breakfast

Serves 2

Ingredients:

2 organic, pastured eggs

1 red bell pepper, chopped and seeded

1 orange bell pepper, chopped and seeded

1/2 zucchini, chope

2 shallots, cut into rings

10 chives

Olive oil for cooking

Fresh ground salt and pepper, to taste

1 ripe avocado

Instructions:

  1. Heat a medium cast-iron pan over medium heat.
  2. Add ghee, butter or olive oil, around 1 tablespoon.
  3. Add the shallots and cook for 4 minutes, stirring when needed.
  4. Add the peppers and cook for 5 minutes.
  5. Add the zucchini, cooking for another 4 minutes.
  6. Once the vegetables are cooked to your liking, crack the eggs into the pan.
  7. Allow to cook for until the white is hard, if you like you can flip the egg over when the edges begin to brown to cook the yolk a little more.
  8. Once the eggs are done, separate the eggs and vegetables onto two plates. 
  9. Gather the chives in your hand and use scissors to cut little pieces onto each plate.
  10. Scoop out a half an avocado onto each plate.
  11. Finish with fresh salt and pepper.
