The weather is beautiful, school is almost done for our girls and soon routines will change. But lately, we have been repeating the same meals each week which becomes a little mundane for me, as the cook.
As I am sure you know, it takes effort and time to feed a family well. I am hoping that this Energizing Spinach and Onion Paleo Quiche recipe can be added to your menu this week. One way that helps to make this process a little easier for me is to create a weekly meal plan.
Every Sunday, at breakfast, we all work on creating a meal plan together. Everyone has a chance to request a meal and make suggestions for breakfasts, lunches,dinners and snacks. After about 5 minutes, we have a meal plan ready to go that usually satisfies everyone.
I do this for a few reasons:
1. It makes meal prep a hundred times easier when I know what I am going to make ahead of time (e.g. taking the chicken out of the freezer the night before).
2. It makes grocery shopping much easier since I have a list of all the ingredients I need for the week.
3. It takes the pressure off figuring out what to make for dinner after arriving home at 5:30pm.
4. It allows me to double some of our favorite meals and use the leftovers for my girls’ school lunches.
5. It shuts down complaining about meals since everyone has had a say.

One of the things I love best about cooking is the freedom to create which is not always so easy when juggling work, kids and the other aspects of life.
So this week, I decided to put a little more effort into one meal and I came up with a quick, easy, energizing dinner.
I have to say it turned out really well. This one is a keeper.
New recipes can be a hit or miss with my girls but to my surprise, Ayla and Farrah liked this Energizing Spinach and Onion Paleo Quiche better than Brad.
This dish made a great light meal paired with a vegetable-packed green salad. Perfect for a warm spring or summer evening.
I was hoping that there would be some leftovers for breakfast the next morning but we ended up eating it all. Next time, I will double the recipe in hopes of getting another meal out of it.
Another bonus to this Energizing Spinach and Onion Paleo Quiche is that it can be served for breakfast, brunch, lunch or dinner.
If you need to add more to the meal, try baked sweet potatoes, roasted potatoes or my fried plantains.

Energizing Spinach and Onion Paleo Quiche
Ingredients:
8 eggs
1/2 cup of full-fat coconut milk (I use the Native Forest brand since it is BPA free)
1 1/2 cups of chopped fresh spinach leaves
1 cup of chopped broccoli
4 green onions, chopped (both the white and green part)
3 cloves of garlic, grated (I use a Microplane to mince all my garlic)
3/4 teaspoon of baking powder
Freshly ground salt and pepper, to taste
5 pieces of crispy, fried pastured bacon cut into 1/2 inch pieces (optional)
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 9″ pie dish with coconut oil or butter.
- In a large bowl, add the eggs and coconut milk and whisk until combined.
- Add in the chopped spinach, broccoli, green onions, garlic, baking powder, salt and pepper and mix.
- Bake for around 25 minutes. Check to make sure that the quiche is firm but that it still has some slight movement in the middle. You don’t want to over cook it.
- Top with bacon bits and serve immediately.
