The weather has been beautiful here in Victoria lately which means I am feeling the pull to spend less time in the kitchen and more time outside.
I’m also enjoying lighter and easy to prepare foods like my Summer Fresh Sesame Salmon or Nan’s Chive and Parsley Potato Salad.
So I thought that you guys would like this Healthy Caesar Salad recipe that we have been enjoying. My girls can’t get enough of it and the last time we had it we made two bowls! Mind you that was the main course for dinner.
Caesar salad has always been a bit of challenge for our family. With a fish allergy, gluten and dairy intolerances, it has never been an option for us all to share.
I have to be honest too. This was Brad’s idea and a combined effort in recipe development.
I love cooking. Sometimes I enjoy the quiet solitude I get in the kitchen but other times I love to cook with friends and family while enjoying a glass of wine.
So when Brad wanted to tackle a Healthy Caesar Salad, I was very happy to have some company in the kitchen. Only next time, we’ll have to have a glass of wine too.
I call this a Healthy Caesar Salad because of the specific ingredients and their quality that we used to make it.
If you’ve been following our blog and read our stories, you know about our struggle with autoimmune diseases, as well as our daily management of severe food allergies.
A big part of our healing was switching from a whole grain, low-fat diet to one that is full of whole, fresh plants, healthy fats and ethically, clean protein while eliminating gluten and (for me) grains.
We are both doing amazing with our health and we have found this way of living to help ease the stress and anxiety of having a child with food allergies.
We are no longer focussed on reading package labels but instead focus on sharing safe, whole, real food as a family.
So this guilt-free, Healthy Caesar Salad was a great creation and is safe for all of us.
As you can guess it is dairy free, gluten free, nut free and Paleo.

Healthy Caesar Salad Recipe
Serves 4-6 as a main course
Preheat the oven to 400 degrees Fahrenheit
Ingredients:
Healthy Caesar Salad Recipe Dressing
In a blender combine:
3 cloves of garlic, minced
3 tablespoons of fresh lemon juice
1 tablespoon of apple cider vinegar
1 tablespoon of olive oil (this gives it a nice flavour)
3 teaspoons of dijon
1 teaspoon of raw honey (need this to balance the acidity)
1/4 cup of homemade Paleo mayo
Sea salt, to taste
Freshly ground pepper, to taste
Salad
1 pound of pastured bacon
2-3 heads of organic, romaine lettuce
3 tablespoons of capers
Instructions:
- Place a cookie cooling rack (with a narrow grid pattern) inside a baking sheet.
- Lay the pieces of bacon on the rack and put in the oven for around 20-30 minutes, depending on how crispy you like your bacon.
- While the bacon cooks, prepare the lettuce by washing, drying and cutting it into bite-sized pieces.
- Place the lettuce in a large bowl.
- Strain the capers and add to the lettuce.
- Once the bacon is cooked, place it on some sheets of paper towel to absorb the extra fat.
- Cut the bacon into bite-sized pieces (I’ll leave that up to your discretion).
- Pour half of the dressing on and combine.
- Add more dressing if you like or save the rest for another time.
- Serve immediately or store in the fridge for up to an hour.
