This Shrimp with Fresh and Spicy Tomatoes recipe was created as a follow-up to our last post Straight From the Heart: A Story of Reversing Food Allergies.
If you haven’t read the post or watched our video, we talk about the success we have had in reversing four out of eight of our daughter’s food allergies through, what we believe to be, diet and lifestyle changes. The post was inspired by a recent visit to our allergist and the successful reintroduction of a whole food category – shellfish!
This recipe was created as a celebration of her ability to now eat shrimp, something we can now enjoy altogether.
There’s nothing like homemade tomato sauce and although this isn’t the classic Italian pasta sauce, it sure is delicious. You don’t have to add the shrimp if doesn’t fit into your dietary regime or tastes, but they sure do boost the nutritional value of the dish.
According to the World’s Healthiest Foods shrimp:
- are a source of astaxanthin, an anti-inflammatory and antioxidant that supports both the nervous system and the musculoskeletal system.
- are an excellent source of selenium (an important antioxidant mineral)
- contain a good amount of copper (another good antioxidant mineral)
- consist of healthy Omega-3 fatty acids
- are a great source of protein
Pair this dish with a big green salad, roasted Brussels sprouts, cucumber and radish salad, or a zesty kale salad and you’ve got yourself a great meal.
Shrimp with Fresh and Spicy Tomatoes
(gluten-free, dairy-free, sugar-free, Paleo)
Serves 4
Ingredients:
2 lbs of shrimp, shelled and deveined
2 onions, chopped
4-6 cloves of garlic, grated on a zester
4 medium tomatoes, chopped
2-3 jalapeno peppers, seeded and chopped
6 tablespoons of fresh lime juice
1/2 teaspoon of chilis flakes
2 tablespoon of fresh parsley, chopped
1 teaspoon of Celtic sea salt, or to taste
1 teaspoon of freshly ground pepper, or to taste
1/2 cup of fresh cilantro leaves, chopped
Avocado oil, refined coconut oil or ghee for sautéing
Instructions:
- Heat a cast-iron pan over medium heat. Add the oil and allow to warm up.
- Add the onions and cook for 2-3 minutes.
- Then add the garlic and jalapeno pepper and sauté for 2-3 minutes.
- After add in the parsley and chilis flakes, continuing to cook for 3 minutes.
- Add in the tomatoes and cook for 5 minutes.
- Finally, add the shrimp, lime juice, salt and pepper and cook until shrimp are an opaque color. You will have to flip the shrimp once to cook them evenly.
- Spoon into a serving bowl and sprinkle with fresh cilantro leaves.
- Enjoy!
