Simplified Salade Nicoise

A salad filled with fresh vegetables and clean protein, this simplified version of a salade nicoise makes a great weeknight meal.

My daughter walked into the kitchen yesterday after school, took one look at this simplified salade nicoise and said “That looks fantastic!” 

I wish each meal I made was greeted with such enthusiasm!

What do you do when green beans are in abundance? Make a simplified version of a salade nicoise for a weeknight dinner. 

This version is quick, easy, delicious and makes healthy and satifying meal. 

Tip: Cook the greens beans but leave them with a slight crunch by blanching in boiling salted water for 2-3 minutes, draining and submerging in a ice bath (a big bowl of cold water with ice in it to stop them beans from cooking further).

Simplified Salade Nicoise

Serves 4-6

Ingredients:

1 head of organic red leaf lettuce, washed, dried and torn into bite-sized pieces

1 cup of Kalamata olives

1 cup of organic cherry tomatoes, halved

2 handfuls of green beans, blanched in salt water, refreshed in an ice bath and drained

3 organic hard-boiled eggs, halved

1 can of tuna (sustaiably caught, if possible)

3 green onions, chopped

Freshly ground Celtic sea salt and pepper

Lemon Tarragon vinaigrette:

1 cup of organic olive oil

4 tablespoons of organic ACV

2 cloves of garlic, minced

1 tabelspoon of Dijon mustard

3 tablespoons of fresh tarragon leaves, chopped

Juice of 1 lemon

Salt & pepper

Instructions:

  1. Make the Lemon Tarragon vinaigrette by adding all the ingredients to a mason jar and shaking until emulsified. 
  2. In a bowl, toss the lettuce leaf with some lemon-tarragon vinaigrette to coat and arrange on a large platter.
  3. In a bowl, add the green beans, olives, tomatoes, green onions and toss with vinaigrette, arrange on the platter.
  4. Drain the tuna and toss to coat with vinaigrette, scatter on the platter.
  5. Add the boiled eggs, season with salt and pepper.
  6. Gather at the table, sit down, get your digestive juices flowing with a shot of digestive bitters, and enjoy!
