THIRST QUENCHING CITRUS SALAD
Serves 4
2 pink grapefruits
2 oranges
1 tangerine
1 blood orange
(or use any mix of citrus fruit)
1 fresh sprig of mint
Salt and pepper
Instructions:
Using a sharp knife, cut into the rind a grapefruit on an angle until you meet the flesh then continue peeling it as your would peel an apple. Make sure to remove all the white pulp for a sweeter taste. Then, cut the grapefruit into bite-sized pieces and place in a bowl. Repeat with other pieces of fruit.
Toss all the fruit gently and using scissors, snip small pieces of mint on top of the chopped citrus and add a few turns of freshly ground sea salt and pepper to bring out the different flavours.
