Yes, you read the title correctly. Here’s a healthier take on the classic oatmeal raisin cookie. These cookies are gluten free and made using coconut sugar (a better choice than refined sugar). Therefore, you’ll feel good about giving your kids these Upgraded Oatmeal Raisin Cookies or enjoying them yourself.
The secret to these cookies is the use of quality ingredients – oat flour, oat flakes, butter, coconut sugar and real vanilla. These Upgraded Oatmeal Raisin Cookies will bring back memories of cookies that your grandmother use to make. They are delicious, light and flavourful.
In fact, you might want to double the recipe and put some in the freezer for those days when you are short on time, just don’t feel like cooking or to have extra’s hanging around.
I usually add dark chocolate chips to my baking (because I am the dark chocolate lover in the family) but lately, I’ve been getting requests from certain family members to swap out the chocolate chips for raisins.
They may unconsciously be on to something. Did you know that raisins are a great source of instant energy? Since they are a carbohydrate, rich in natural sugars, they provide a quick energy boost. Upgraded Oatmeal Raisin Cookies
Ingredients:
1 cup of grass-fed or organic butter
2 eggs
1/2 or 3/4 cup of coconut sugar (depending on your sweet tooth)
1 tablespoon of pure vanilla extract
1 cup of gluten-free oat flour
2 cups of gluten-free oat flakes
1/2 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoon of salt
1/2 cup or organic raisins and/or chocolate chips
Instructions:
- Preheat the oven to 350 degrees Fahrenheit.
- In a food processor, add the butter, coconut sugar, eggs and vanilla and pulse to combine. Make sure to scrape down the sides.
- In a bowl combine the gluten-free oat flour, gluten-free oat flakes, baking powder, baking soda and salt. Stir with a spoon to mix.
- Add the dry ingredients to the wet and pulse to combine.
- Remove blade and add in 1/2 cup of organic raisins, mix using a wooden spoon to incorporate the raisins into the dough.
- Line a cookie sheet with parchment paper and scoop out 1 tablespoon of cookie dough. These cookies won’t spread too much so you can put 12 scoops on a tray.
- Flatten the cookies with a fork or your hand.
- Bake for 10-12 minutes.
- Remove the Upgraded Oatmeal Raisin Cookies from oven and allow to cool before eating.
- Enjoy!
