Here’s a soup that will keep your immune system rocking against the germs that tend to go around as the weather gets colder and our time outside reduces. This Hearty Carrot, Cabbage and Beet Soup is a super-nourishing soup that will warm you from head to toe on those cold nights.
Embracing Winter
If you read our last article Hygge: How to Stay Energized And Upbeat As the Days Get Darker And Shorter, then you know that we are going into the winter season with a different mindset this year. Living up in Canada, we are very aware of the effects winter can have on people such as depression, lack of movement and a reduction in time outside.
So, this year we are going to embrace the colder, darker weather by creating a more Hygge experience and this Carrot, Cabbage and Beet Soup fits in perfectly.
We first had this soup with a good friend who was training us in Bioenergy Healing (a fascinating field of work). Brad and I have been expanding our knowledge and exploring the use of energy work and light therapy as part of our practice (if you are interested in what we are doing come chat with us, we’d love to talk with you).
One day of the training was a little cold and she had made this soup for us for lunch. Both Brad and I fell in love with it with the first bite. It is a very nourishing, hearty and satisfying soup, especially during the colder months.
Try and Try Again
I tried to recreate it myself but it just didn’t taste the same. I couldn’t get this soup out of my head so I finally reached out to her and managed to get a better sense of the proportions.
The Perfect Combination: Carrot, Cabbage and Beet Soup
I went back to the kitchen and made it again and the outcome was delicious.
This Carrot, Cabbage, and Beet the Flu Soup is all about the vegetables. The first time I made it, I used chicken bone broth, as an added nutrient boost but I have to admit that the second time I made it, I didn’t have any bone broth so just used water. And to be honest, I am a big supporter of bone broth for its healing benefits, but this soup tasted better with the water.
What makes this Carrot, Cabbage and Beet Soup so amazing is the earthiness of the vegetables. You can add a dollop of full-fat organic sour cream if you like but I prefer it as it is.

Carrot, Cabbage and Beet the Flu Soup
Ingredients
1-2 tablespoons of olive oil
1 large onion
4 large carrots
6-8 large beets
1/2 small organic purple cabbage
8 cups of water
1 bay leaf
2 teaspoons of Celtic sea salt
1 teaspoon of freshly ground black pepper
Organic sour cream or coconut milk for a topping (optional)
Instructions
- Heat the oil in a large pot over medium heat.
- Dice the onion and add to the oil. Cook for 5 minutes, stirring often.
- Prep the carrots and beets by peeling them and then grating them using a hand grater or a food processor.
- Prep the cabbage by grating it.
- Once the onions have softened, add in the grated carrots, beets and cabbage.
- Saute for 5 minutes.
- Add in the water, bay leaf, salt and pepper.
- Bring to a boil and then reduce to simmer for at least an hour.
- Taste and adjust seasoning before serving.
- Top with full-fat organic sour cream or coconut milk (optional)
