It’s February and it’s the month to celebrate love. If you are looking to celebrate Valentine’s Day with a loved one, family, friends or with yourself, these Sugar-Free Chocolate Love Bites are perfect.
Valentine’s Day isn’t a big thing in our household. I am happy to spend time and effort creating a favorite food in the kitchen and spending quality time together, such as going for a hike, to the beach, a recreation center, etc.
This year, I’ll be making these Sugar-Free Raw Honey Love Bites. They are simple, easy, free of refined sugar and other “ingredients” found in many store-bought chocolates.
If honey isn’t your thing, then try out these Sugar-Free Peanut Butter Cups for a healthy and delicious version of a Reese’s Peanut Butter Cup:
or our favorite “cake.“
You can also create an amazing exotic fruit plate as a special treat. This is something that we do to celebrate birthday’s in our house. Here’s our most recent fruit platter (psst…all credit for the creation of the fruit plates goes to my husband, Brad).
But…
If you are like me and you like chocolate, then try out these Sugar-Free Chocolate Love Bites…Your family will be happy to eat a delicious treat and you’ll feel good knowing that all of the ingredients in these Sugar-Free Chocolate Love Bites are beneficial to the body.
Sugar-Free Chocolate Love Bites
Ingredients:
(refined sugar-free, nut-free, dairy-free, Paleo)
Makes 20 Love Bites
8 tablespoons of raw cacao powder
6 tablespoons of coconut oil
2 tablespoons of grass-fed butter (optional or substitute with 2 more tablespoons of coconut oil)
1/4 teaspoon of Vanillamax powder or pure vanilla extract
3-5 teaspoons of xylitol (grounded finely in a blender or coffee grinder)
20 small parchment paper cupcake liners fit into a mini muffin tin.
3-4 tablespoons of raw honey
1 tablespoon of bee pollen (optional)
Instructions:
- In a glass bowl, combine the coconut oil and butter and melt over a double-boiler.
- Once melted, stir in the vanilla powder and mix to combine using a whisk.
- Add in the raw cocoa powder and stir well to integrate (be very careful that you don’t get any water into the mixture or it will ruin the batch).
- Once the cacao has been mixed in, add the xylitol starting with 3 teaspoons and tasting as you go (You may find the mixture a little bitter but don’t add more than 5 teaspoons of xylitol, once the chocolate has hardened, the bitterness disappears).
- Line a pan of mini muffins with the parchment liners.
- Spoon 1/2 teaspoon of chocolate into mini muffin liners, just to coat the bottom.
- Refrigerate for around 5-10 minutes until the chocolate has set.
- Remove the muffin tin from the fridge and add 1/2 teaspoon of raw honey to each cup (it will spread out nicely on its own).
- Place the muffin tin back in the fridge for 5 minutes to solidify the honey.
- If need, warm up the remaining chocolate (I usually leave it in the double-boiler).
- Once liquefied, remove the muffin tin from the fridge and spoon/pour 1/2 teaspoon of chocolate on top of the honey, making sure it is all covered.
- Repeat for the remaining bites.
- Return to the fridge for another 10 minutes.
- Once the chocolate has hardened, remove from the fridge and enjoy!
These Sugar-Free Raw Honey Love Bites are best stored in an airtight container in the fridge to keep fresh and to prevent melting.
Happy Valentine’s Day!
